Melt the butter in a large soup pot over medium heat, then add the chopped onion, carrot, and celery. Sauté for about 5 minutes, until the vegetables are softened and fragrant, stirring occasionally so they cook evenly.
Add the garlic and cook for about 1 minute, just until fragrant. Keeping the garlic brief prevents it from becoming bitter.

Pour in the chicken broth and add the potatoes, then bring the mixture to a gentle simmer. Cook for 10 to 15 minutes, until the vegetables are very soft and easily pierced with a fork.

Carefully transfer the soup to a blender and puree until smooth and creamy, working in batches if needed. Alternatively, use an immersion blender directly in the pot for easier blending and less cleanup.
Stir in the milk and heavy whipping cream, and let the soup heat through over low heat without boiling. Season with salt and pepper to taste, adjusting as needed for balance.

Ladle the soup into bowls, garnish as desired, and serve warm.
Chef Jenn’s Tips
- The best broth makes the best soup. For the most flavorful soup, use homemade broth or buy good-quality chicken broth.
- You can make this a vegetarian Irish Potato Soup by using vegetable broth instead of chicken.
- Don’t rush the simmering process; allowing the flavors to simmer together slowly will result in a more flavorful soup.
- Garnish your soup with crispy bacon, cheddar cheese (Irish cheddar, of course) and green onions.
