  6. Brush the patties all over with the mayonnaise then press them into the Panko-onion crumbs.
  7. Transfer the coated patties to your air fryer and air fry at 400-F for about 10 minutes then flip and cook until they reach an internal temperature of 165-F.
  8. Remove them from the air fryer, serve with a spoonful of the reserved crumbs, and enjoy!

Step-By-Step Process

Tried-and-True Tips

  • Use lean ground pork so you don’t have much fat coming out of the patties as they cook.
  • Panko keeps its crunch through the cooking process, but you could use regular bread crumbs if you can’t find Panko.
  • Add more flavor! A bit of onion powder and garlic powder to the pork mixture will infuse it with even more flavor.

Make It A Meal

Serve these crispy croquettes on a bed of fresh mixed greens or alongside a tangy coleslaw to balance the richness. They also pair wonderfully with a dollop of sour cream or a rustic mustard sauce. For a heartier meal, consider adding a side of roasted vegetables or a simple tomato salad.

Storage

Leftover croquettes can be stored in an airtight container in the refrigerator for up to three days. To reheat, simply place them in a preheated oven or air fryer at 350°F (175°C) until warmed through. These croquettes also freeze well. Freeze them on a baking sheet until solid, then transfer to a freezer-safe bag or container. They can be baked straight from frozen, adding a few extra minutes to the cooking time to ensure they’re heated through and crispy, which makes them perfect for meal prepping.

These croquettes are my new favorite recipe. I love anything crispy and crunchy coated in panko. I also love this recipe uses mashed potatoes which I usually make more than we need and like to have recipes to use the leftovers.
