When the fresh, local tomatoes are in season, we kind of go tomato crazy. It’s not unheard of for me to bring home a bushel of tomatoes from the farmers market and then freeze them to make sauces all winter long.
Or, we indulge in amazing fresh tomato sandwiches, like this Texas BLT. With a kick of spice and a few other tasty twists, this isn’t your Momma’s BLT sandwich.
I love serving this Texas BLT for a quick lunch or an easy dinner. It’s a favorite in our household, and the best part is that you can make the components ahead of time, making it a convenient and delicious meal. The key to this recipe’s success is using thick-cut bacon and quality ingredients, which make all the difference in flavor and texture.

Ingredients
- Texas toast bread – Texas toast is ideal, but thick-cut white bread or sourdough work well too.
- Bacon – Thick-cut bacon is best. Regular bacon works if that’s what you have.
- Mayonnaise – Use a good-quality mayo. Duke’s or Hellmann’s are solid options.
- Pepper Jack cheese – I shred it myself. Sharp cheddar or Monterey Jack are good substitutes.
- Chipotle mayonnaise – Adjust to taste. You can mix mayo with chipotle powder if needed.
- Large tomatoes – Beefsteak or vine-ripened tomatoes work best. They’re flavorful without being watery.
- Lettuce leaves – Romaine hearts or iceberg are ideal. Both stay crisp and hold up well.

How To Make The Texas BLT

Cook the bacon in a skillet over medium heat until crisp. Remove and drain on paper towels, then set aside.

Spread 1 tablespoon of mayonnaise on one side of each slice of bread. Heat a large skillet or griddle over medium-high heat. Sprinkle 1 tablespoon of shredded cheese onto the skillet, then place a slice of bread on top, mayonnaise side down.

Grill the bread until golden brown, about 3–4 minutes, adjusting the time depending on your heat. Transfer the toasted bread to a flat surface.

Assemble the sandwiches by spreading 1 tablespoon of chipotle mayo on the plain side of each slice. Layer with bacon, lettuce, and tomato. Close the sandwiches, cut in half if desired, and serve immediately.

- Use the freshest, ripest tomatoes you can find. They make all the difference!

Storage
If you have leftovers, and that’s a big IF because these sammies are so good, store them in the fridge but pull out the tomato and lettuce so they don’t get your bread soggy.

Instructions
