Instructions
Cook the bacon until it is crispy and set aside.
Butter one side of each slice of bread and place them buttered side down on a griddle or large skillet.
Add a slice of cheese to each piece of bread, followed by three slices of bacon, and then another slice of cheese.
Spread the hot honey butter on one side of the second piece of bread, with regular butter on the other side. Place the honey butter side down on top of the cheese.
Cook on the griddle until the bottom is golden brown, then flip the sandwich and continue cooking until both sides are golden and crisp and the cheese is fully melted.

To melt the cheese perfectly without over-toasting the bread, cover the sandwich with a stainless steel lid or bowl while it cooks. This traps the heat and helps the cheese melt evenly. Just be careful, as the bowl will get hot.
