Cheesy Tater Tot Breakfast Casserole

Ingredients
  

  • 4 slices bacon cooked and crumbled
  • 1 lb breakfast sausage casings removed
  • 2 ½ cups sharp cheddar cheese shredded and divided
  • 2 cups whole milk
  • 3 large eggs
  • ½ cup bell pepper red, green or yellow work well, diced
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon onion powder
  • 1/8 tsp salt
  • 2 lbs tater tots frozen
  • 3 tablespoons parsley freshly chopped for garnish

Instructions
 

  • Preheat oven to 375°F and grease a 9x13-inch baking dish.
  • Cook sausage in a skillet over medium-high heat, breaking it into crumbles. Drain and layer the sausage in the baking dish.
  • Sprinkle 2 cups of cheese over the sausage.
  • Whisk together milk, eggs, bell pepper, green onion, pepper, onion powder, and salt in a mixing pitcher. Pour over the sausage and cheese.
  • Top with frozen tater tots, covering most of the surface.
  • Bake uncovered for 35 to 40 minutes or until the eggs are mostly set.
  • Sprinkle remaining cheese and bacon on top. Return to the oven for 5 to 10 minutes, until melted and golden.
  • Let rest for 10 minutes before slicing. Garnish with parsley if desired.
