Melt the butter over medium heat in a large soup pot. Add the chopped onion, carrot, and celery. Sauté until the vegetables are softened and fragrant, about 5 minutes. Add the minced garlic and cook for an additional minute.
Add the chicken broth and potatoes and simmer for 10-15 minutes or until the vegetables are very soft.
Transfer the soup to a blender and puree until smooth and creamy, or use an immersion blender to puree the soup.
