Ingredients
  

  • 1 pound ground beef 80/20 for best flavor
  • 2 tablespoons olive oil
  • 1 cup yellow onion finely diced
  • 1 cup green bell pepper finely diced
  • 1 cup celery finely diced
  • 3 cloves garlic minced
  • 1 tablespoon Cajun seasoning salt-adjusted
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper optional
  • ¼ teaspoon freshly cracked black pepper
  • 2 cups long-grain white rice uncooked
  • 1 ¾ cups beef broth
  • 1 ¾ cups water
  • ½ teaspoon kosher salt to taste
  • green onions thinly sliced, for garnish
  • bay leaf

Instructions
 

  • Heat the olive oil in a large Dutch oven over medium-high heat.
  • Add the ground beef and brown thoroughly, breaking it up as it cooks.
  • Add the onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  • Stir in the garlic, Cajun seasoning, paprika, cayenne, and black pepper. Cook 30 seconds or until fragrant.
  • Add the uncooked rice and stir until coated.
  • Pour in beef broth, water, and bay leaf. Scrape the bottom of the pan to loosen all those flavorful bits.
  • Bring to a boil, reduce the heat, cover, and simmer for about 15 minutes.
  • Remove from heat and rest for 5 minutes.
  • Fluff with a fork, adjust the seasoning, and garnish with green onions.

Chef Jenn’s Tips

  • Let the beef brown properly before stirring for the best flavor. Pale meat equals bland rice.
  • Use long-grain rice so the grains stay fluffy instead of sticky.
  • If your pan runs hot, lower the heat slightly during simmering to prevent scorching.
  • For extra richness, stir in a tablespoon of butter right before serving.
