Ingredients
  

  • 4 slices bacon
  • 4 large eggs
  • 1 tablespoon milk
  • salt and pepper to taste
  • 4 flour tortillas
  • ½ cup cheddar cheese shredded
  • ½ cup Monterey Jack cheese shredded
  • 1 tablespoon butter or oil

Optional

  • scallions sliced
  • tomato diced
  • avocado

Instructions
 

  • Cook the bacon in a nonstick skillet over medium heat until crispy, then drain and crumble.
  • Whisk the eggs, milk, salt, and pepper in a bowl until smooth.
  • Heat butter or oil in the same skillet over medium heat. Pour in half the egg mixture and tilt the pan to coat the bottom evenly.
  • When the eggs are 75% set, press one tortilla on top and gently press to adhere.
  • Flip the tortilla-and-egg so the tortilla is on the bottom.
  • Add ¼ cup cheddar, ¼ cup Monterey Jack, and half the bacon on top of the cooked egg.
  • Place a second tortilla on top and press lightly. Cook 1–2 minutes until the bottom is golden.
  • Flip and cook the other side until crispy and the cheese is fully melted.
  • Transfer to a board, rest 1 minute, then slice.
  • Repeat with the remaining eggs, tortillas, and bacon to make the second quesadilla.

Notes

Chef Jenn’s Tips

  • Use a fish spatula for flipping; it slides under the tortilla cleanly.
  • Don’t rush the first flip; let the eggs set enough to stay intact.
  • Warm your tortillas beforehand for better flexibility and browning.
