Coconut Easter Bunnies

Ingredients
  

  • 6 white chocolate-covered almonds
  • 9 coconut Raffaello chocolates
  • almonds sliced
  • 1 teaspoon snowflake sprinkles
  • 9 walnut halves
  • 2 teaspoons green chocolate shards or colored coconut shavings to serve
  • ¼ cup white candy melts

Instructions
 

  • Use a sharp knife to carefully trim the walnuts and coconut balls, creating flat surfaces where they will be connected.
  • Melt the white candy melts using a double boiler or microwave. Heat in 15-second intervals, stirring until smooth and fully melted.
  • Dip the trimmed side of each walnut and coconut candy into the melted chocolate. Press them together to form the base of the bunny. Place in the fridge for 15 minutes to set.
  • Add a small dollop of melted chocolate on top of each Raffaello ball. Press a white chocolate-covered almond onto the chocolate to create the bunny’s face.
  • Using the melted chocolate as glue, stick the almond slices on either side of the almond face to resemble ears. Sprinkle snowflake sprinkles on top for the bunny’s bangs.
  • Chill the assembled bunnies in the refrigerator until the chocolate is firm.
  • Use a water-based food marker to add expressions to the bunny faces. Let the kids join in — it’s a fun and creative step!
  • Scatter green chocolate shards or colored coconut shavings on a serving plate to resemble grass. Arrange the bunnies on top and enjoy!

Notes

Chef Jenn's Tips

  • Swap walnuts for pecans if you prefer a sweeter, buttery flavor.
  • Almond slices can be substituted with small cornflakes for a fun twist.
  • Make these treats ahead and store them in the fridge to keep them fresh.
