I love this recipe. It’s so quick and easy to make and grilling the beef tips first means I don’t have to heat up the kitchen. I’ll even add a skillet to the grill and cook right over the fire.

Ingredients
- Beef sirloin tips – I use sirloin tips because they stay tender without needing an extended cook time. You’re grilling, so you want a cut of beef that stays tender. Just don’t overcook them!
- Cooking oil – Use a neutral oil with a higher smoke point; avocado or vegetable oil are good options.
- Yellow onion – Yellow onion is the safest choice here; sweet onions can be used but will make the sauce slightly sweeter.
- Mushrooms – I used white button mushrooms but cremini will also work.
- Salted butter – If you use unsalted butter, plan to season a little more carefully at the end.
- All-purpose flour – This is the most reliable thickener; cornstarch can be used instead, but the sauce will be glossier and slightly looser.
- Water – I stick with water since the beef base already provides seasoning; broth works if you reduce added salt elsewhere.
- Worcestershire sauce – Worcestershire is preferred, but a splash of steak sauce can work in a pinch.
- Maggi sauce – I use it lightly; if you don’t have it, increase Worcestershire slightly to compensate.
- Better Than Bouillon beef base – This is very concentrated, so measure carefully to avoid oversalting.
- Fresh garlic – Fresh garlic – Use fresh garlic here; jarred garlic won’t give the same flavor.
- Onion powder – Use onion powder, not onion salt, so you can control the seasoning.
- Salt and pepper – Season to taste

How To Make Texas Roadhouse Beef Tips

Season the beef sirloin tips generously with salt and pepper, making sure each piece is coated evenly. Preheat a grill or grill pan to medium-high heat. Grill the beef tips for 3–4 minutes per side, or until nicely browned and cooked to your preferred level of doneness. Transfer the beef to a plate and set aside to rest while you make the sauce.


In a large skillet, melt the butter over medium-high heat. Add the chopped yellow onion and sliced mushrooms and sauté until the onions are translucent and the mushrooms are tender. Sprinkle the flour over the vegetables and stir continuously for 1–2 minutes to cook out the raw flour taste, forming a roux.


Gradually whisk in the water until the mixture is smooth. Stir in Worcestershire sauce, Maggi sauce, Better Than Bouillon beef base, garlic powder, and onion powder. Simmer for about 5 minutes, stirring occasionally, until the sauce thickens and flavors meld. Taste and adjust seasoning with salt and pepper as needed.

Return the grilled beef tips to the skillet, coating them in the gravy. Serve hot over mashed potatoes, rice, or egg noodles for a comforting, hearty meal.

This was my first attempt at cooking using mushrooms. I used a sirloin ‘steak’ cut instead of tips and added minced fresh garlic. Since I did not have any all-purpose flour on hand at the time, I used whole wheat flour. I cooked the meat using the sous vide method and finished on a Blackstone griddle. The recipe was very easy to follow.
The gravy was very beefy and very flavorful, and the mushrooms and onions were heavenly! I smothered a third of the meat in the gravy and savored every bite! I will make some potatoes, either baked or mashed, and enjoy the rest of the gravy and steak over the potatoes to finish off the rest of the steak and gravy.
