Ingredients

  • Ground pork – I use lean ground pork so the croquettes stay crisp instead of greasy.
  • Leftover mashed potatoes – Cold mashed potatoes work best here; warm potatoes make the mixture too soft to shape.
  • All-purpose flour – This helps bind everything together so the croquettes don’t fall apart while frying.
  • Dijon mustard – Yellow mustard works in a pinch, but Dijon has better tang.
  • Worcestershire sauce – A small amount adds depth and umami; too much can make the mixture salty.
  • Salt and pepper – Season to taste.
  • Panko bread crumbs – I stick with panko because it creates a lighter, crispier crust than regular breadcrumbs.
  • Butter – Salted or unsalted, both work. If you’re using unsalted butter, add a pinch of salt to the meat mixture.
  • Mayonnaise – Full-fat mayo works best. Light mayo can separate when mixed with warm ingredients.
  • Crispy fried onions – Like French’s Original Crispy Fried Onions. Don’t use raw shallots—they won’t cook through in time.

How To Make Copycat HelloFresh Crispy Shallot Croquettes

Preheat the air fryer to 400°F so it is fully hot and ready when the patties go in.

Melt the butter in a skillet over medium-high heat, then add the Panko bread crumbs. Stir frequently until the crumbs turn golden brown and toasty. Transfer them to a medium bowl to cool slightly. A silicone spatula helps scrape every bit of buttery crunch from the pan.

Mix ground pork, mashed potatoes, flour, Dijon mustard, Worcestershire sauce, salt, and pepper in a large bowl.

Crush the crispy fried onions using a rolling pin or food processor, then stir them into the toasted Panko. Reserve about ¼ cup of the mixture for serving later.

Combine the ground pork, mashed potatoes, flour, Dijon mustard, Worcestershire sauce, salt, and pepper in a large bowl. Use a meat chopper to mix everything evenly without overworking the meat.

Shape the mixture into medium-sized patties, keeping them uniform so they cook evenly.

Brush the patties lightly with mayonnaise using a pastry brush, then press them firmly into the Panko and onion mixture until well coated.

Arrange the patties in the air fryer basket in a single layer. An air fryer liner helps prevent sticking and makes cleanup easier. Air fry at 400°F for about 10 minutes, flip carefully, then continue cooking until the croquettes reach an internal temperature of 165°F. An instant-read thermometer takes the guesswork out.

Remove the croquettes from the air fryer, sprinkle with the reserved crispy crumbs, and serve hot.

Chef Jenn’s Tips

  • Use lean ground pork so you don’t have much fat coming out of the patties as they cook.
  • Panko keeps its crunch through the cooking process, but you could use regular bread crumbs if you can’t find Panko.
  • Add more flavor! A bit of onion powder and garlic powder to the pork mixture will infuse it with even more flavor.

Make It A Meal

Serve these crispy croquettes on a bed of fresh mixed greens or alongside a tangy coleslaw to balance the richness. They also pair wonderfully with a dollop of sour cream or a rustic mustard sauce. For a heartier meal, consider adding a side of roasted vegetables or a simple tomato salad.

Storage

Leftover croquettes can be stored in an airtight container in the refrigerator for up to three days. To reheat, simply place them in a preheated oven or air fryer at 350°F (175°C) until warmed through. These croquettes also freeze well. Freeze them on a baking sheet until solid, then transfer to a freezer-safe bag or container. They can be baked straight from frozen, adding a few extra minutes to the cooking time to ensure they’re heated through and crispy, which makes them perfect for meal prepping.

Ingredients
  

for pork

  • 1.5 pounds lean ground pork
  • ¼ cup mashed potatoes leftover mashed potatoes work great
  • 3 tablespoons all-purpose flour
  • 2 tablespoons dijon mustard
  • 2 tablespoons Worcestershire sauce
  • ¾ teaspoon salt
  • ¼ teaspoon pepper

for the topping

  • 1 ¼ cups Panko breadcrumbs
  • 2 tablespoons butter
  • ½ cup crispy onions crushed
  • cup mayonnaise

Instructions
 

  • Preheat your air fryer to 400°F (200°C).
  • Melt the butter in a skillet add the Panko bread crumbs, and cook them over medium-high heat, stirring frequently, until they’re golden brown. Transfer the crumbs to a medium-sized bowl.
  • Crush the crispy fried onions and add them to the butter-Panko mixture and mix well to combine. Set aside about ¼ cup of this mixture.
  • Combine the ground pork, mashed potatoes, flour, Dijon mustard, Worcestershire sauce, salt, and pepper in a large bowl.
  • Shape the mixture into medium-sized patties.
  • Brush the patties all over with the mayonnaise then press them into the Panko-onion crumbs.
  • Transfer the coated patties to your air fryer and air fry at 400-F for about 10 minutes then flip and cook until they reach an internal temperature of 165-F.
  • Remove them from the air fryer, serve with a spoonful of the reserved crumbs, and enjoy!

    These croquettes are my new favorite recipe. I love anything crispy and crunchy coated in panko. I also love this recipe uses mashed potatoes which I usually make more than we need and like to have recipes to use the leftovers.
