- Yellow onion – White onion works. Red onion is too sweet for this dish.
- Bell pepper – Any color bell pepper works.
- Celery – Dice it small so it softens evenly with the onion and pepper.
- Garlic – Fresh garlic only. Jarred garlic won’t give the same clean flavor and can turn bitter when cooked.
- Cajun seasoning – I look for a lower-sodium blend so I can control the final seasoning.
- Paprika – Smoked paprika adds extra depth, but regular paprika works fine.
- Cayenne pepper (optional) – Add this if you like heat. Skip it for milder rice.
- Freshly cracked black pepper – Freshly cracked black pepper has the best flavor.
- Long-grain white rice – Long-grain white rice works best. Don’t use minute rice.
- Beef broth – I use low-sodium broth so the dish doesn’t end up overly salty.

How To Make Dirty Rice with Ground Beef

Heat a large Dutch oven or deep sauté pan over medium-high heat. Add the olive oil and allow it to warm for about 30 seconds so the beef browns properly instead of steaming.
Add the ground beef and break it up using a meat chopper tool. Let it cook undisturbed for a minute or two so it develops real color, then continue breaking it apart and browning until fully cooked.

Add the diced onion, bell pepper, and celery to the pan. Stir well and cook for about 5 minutes, until the vegetables soften and begin to turn lightly golden. This “holy trinity” is the flavor base, so don’t rush this step.
Stir in the minced garlic, Cajun seasoning, paprika, cayenne (if using), and black pepper. Cook for about 30 seconds, stirring constantly, until fragrant.

Add the uncooked rice and stir thoroughly so every grain gets coated in the seasoned fat. This step helps the rice cook evenly and boosts flavor. Pour in the beef broth, water, and bay leaf. Use a flat-edged wooden spoon to scrape up any browned bits from the bottom of the pan, which adds extra depth to the dish.

Bring the mixture to a gentle boil. Reduce the heat to low, cover with a tight-fitting lid, and simmer for 18 to 20 minutes, until the rice is tender and the liquid is absorbed.
