I inherited escargot dishes a million years ago, but we don’t like snails and I never buy or make them. So what to do with the dishes? The little divots are just begging to be filled with tasty bites and then to be covered in garlic butter. Yum! Serve it with good bread to soak up all the butter!

Ingredients
- Steak – I use sirloin steak tips or even your favorite cut of steak. The key is to use a tender steak and not overcook the bites.
- Salted butter – You can use unsalted butter but then add a pinch of salt before topping the bites and baking.
- Worcestershire sauce
- Shallots – Shallots have a lovely mild onion flavor. You could also use sweet onions.
- Garlic – Please use fresh garlic, not jarlic. It just doesn’t have the same flavor.
- Parsley – Fresh parsley adds a pop of fresh flavor.
- Lemon juice – A squeeze of lemon juice adds acidity to balance the richness of the butter.
- Freshly ground black pepper

How To Make Garlic Butter Steak Bites Escargot-Style
- Set your oven to 375°F (190°C).
- Mix together the softened butter, minced garlic, chopped shallots, parsley, lemon juice, Worcestershire sauce, salt, and pepper. Stir until smooth and well combined.
- Heat a skillet over high heat. Add a splash of oil and sear the steak bites for about 1 minute per side until browned but not fully cooked. Remove from the heat and set aside.
- Place one steak bite into each well of an escargot dish. Top each bite with a generous dollop of the garlic butter mixture, ensuring it coats the steak and fills the well.
- Transfer the escargot dish to the preheated oven and bake for 5–7 minutes, or until the steak bites are cooked to your preferred doneness and the garlic butter is bubbling.
- Remove from the oven and sprinkle with extra chopped parsley for a fresh finish. Serve immediately with crusty bread to soak up the flavorful garlic butter.
Step-By-Step Process

Chef Jenn’s Tips
- Use a tender cut of steak like ribeye or sirloin for the best results.
- For a smoky touch, add a pinch of smoked paprika or even chipotle powder to the garlic butter.
- Don’t overcook the steak bites—searing and baking briefly ensures they stay juicy.
- If you don’t have an escargot dish, use a mini muffin tin as a substitute.
