Spaghetti Bread is the ultimate mash-up comfort food. It’s everything you love about spaghetti night, tender pasta, rich meat sauce, and gooey cheese all baked into crispy, garlicky sub rolls. Whether you’re serving it for game day, weeknight dinner, or a fun twist on family pasta night, this recipe is a crowd-pleaser from the first bite.

I like to think of it as garlic bread taken to the next level, warm, saucy, and totally satisfying. It’s perfect when you need a quick, filling dinner that feels fun and a little indulgent. You can even set up a “build your own spaghetti sub” bar with different cheeses or toppings if you’re feeding a crowd.

Preheat the oven to 400°F. Line a large baking sheet with parchment paper to keep cleanup easy. Slice the sub rolls in half and place them cut side up on the sheet.
In a nonstick skillet, brown the ground beef over medium heat until fully cooked, breaking it apart as it cooks. Drain off any excess fat, then stir in 2 cups of spaghetti sauce and simmer on low while you prep the other ingredients. Stir occasionally so it doesn’t stick.

In a small bowl, mix the melted butter and garlic powder. Brush the garlic butter generously onto the cut sides of the rolls using a silicone pastry brush—I love this tool because it spreads evenly and is easy to clean. Bake the rolls for 10 minutes until they’re just beginning to brown and get crisp.

Meanwhile, boil the spaghetti in a large stockpot of salted water until al dente. Drain and return the noodles to the pot. Stir in the remaining sauce and toss to coat.

Now it’s time to assemble. Top each toasted roll with a spoonful of the meat sauce, a pile of sauced spaghetti, and a generous sprinkle of mozzarella. You can use pre-shredded mozzarella for convenience, but freshly shredded melts beautifully.

Bake the loaded spaghetti bread for 8 to 10 minutes, or until the cheese is melted and bubbly. Garnish with chopped parsley if you’re feeling fancy.

Chef Jenn’s Tips
- Use hoagie rolls or small baguettes if you can’t find sub rolls.
- Try adding a sprinkle of red pepper flakes or Italian seasoning for extra flavor.
- You can prep the meat sauce and spaghetti a day ahead and just assemble when ready to bake.
Make It A Meal
Serve this with a simple green salad, a side of roasted veggies, or even a bowl of tomato soup for dipping. It’s hearty enough on its own but pairs well with something fresh and crisp.

Storage
Wrap leftover spaghetti bread in foil and store in the refrigerator for up to 3 days. Reheat in the oven at 350°F until warmed through. Avoid microwaving to keep the bread crispy.
